A picnic with Chinese yam bread 長芋のケーキ

ピクニックにぴったりの簡単なマクロビオティックケーキです。長芋のすり卸し350gを卵白みたいにホイップしたら、刻みナッツ100gと刻みレーズン50gを混ぜます。芋の泡を潰さないように、シナモンパウダー2分の1tspと一緒にふるった小麦粉1cupをヘラでさっくり混ぜ合わせたら、油を塗った焼き型に流し込み180℃のオーブンで30分焼いて様子をみます。串を刺して何も付いてこなかったら200℃に上げて10分、表面に焼き色をつけて出来上がり。外はカリッとして、中はレーズンの甘みとナッツのカリカリがおいしいしっとり生地です。
さて、私たちは長芋ケーキとポット持参でスタバで買ったコーヒー、新聞紙、膝掛け、バドミントンセットをもってピクニックです。
I like to search and try easy bread and cupcake recipes. These are very convenient for a breakfast, a snack and a picnic.
Today's recipe is a chinese yam bread. This bread does use no sugar, no egg and no oil. But we can feel a moist texture and natural sweetness of dried fruits and nuts. My husband doesn't have an interest in vegetarian meal so much, but he likes this bread.
Preheat the oven to 350F. In a large bowl, beat the grated yam liquid 350g until fluffy like a egg white with a pinch of salt. Combine the minced raisins 50g (you can soak raisins in water or orange juice for soft and texture) and roasted and minced walnuts 100g in the bowl and mix well. Add the all-purpose flour 1cup and cinnamon powder 1/2tsp to the mixture and stir it gently. Then keep the form of yam. Pour the batter into the prepared baking pan which is greased. Bake for 30 to 35 minutes until a cake tester inserted in the center of the cake comes out clean. And bake for 200F to 10 minutes or less until the surface become golden brown.
Some slices of this bread, a coffee pot, news papers and blankets are our happy picnic equipments.
